Some types stay that way, but most soon start to granulate, that is, the glucose separates out as crystals. The honey looks solid with white crystals, which gives the honey a pale appearance. The honey will be clear or set, depending on the honey’s natural propensities and what the market requires. Creamed or churned honey has been commercially crystallized under controlled conditions. This type of honey may have fine white crystals, like a dusting of caster (superfine) sugar, around the top of the jar. This is perfectly normal.
